Bacon Breakfast Burritos

I love the Panini Happy family. It’s not just me in my home office typing on a computer. There are a whole bunch of you out there who are grilling along with me, suggesting new combinations and bringing up interesting ideas and opportunities. Today’s Bacon Breakfast Burritos recipe was inspired by one reader’s comment…and it’s featured as a guest post for another reader.

My guest post for these burritos is over on Meal Planning Magic, a blog written by a longtime Panini Happy reader, Brenda. She launched a Breakfast Challenge for the month of March in an effort to “stop boring breakfasts” and encourage folks to exchange fun breakfast options. When Brenda invited me to create a breakfast recipe for the panini grill I recalled a recent comment from Andrew Davis in which he mentioned that he wanted to try making my Ham, Eggs & Cheddar Breakfast Crepes recipe with tortillas. I realized that I’ve never grilled a burrito on this blog. I’ve done a wrap and a quesadilla before, so it wouldn’t be that much of a stretch. Plus I always appreciate it when taquerias give the burritos a little toast on the flat top before serving. In my breakfast version I cook bacon in a skillet, sauté potatoes, onions and peppers and scramble eggs in some of the leftover bacon grease, roll it up with cheddar cheese inside a flour tortilla and grill the whole thing for those crispy, golden grill marks. With a little salsa and sour cream on the side, this is definitely a breakfast my family looks forward to. 🙂

  2. I have a Mario Batali (sp?) cast iron grill. any of your readers regularly use a cast iron grill? i have trouble with sticking with just about anything. i’m probably doing something wrong. I went the nonelectric route so i could use it on the grill and camping. Ideas/?

But I’m hoping to get my hands on a cast iron one soon and get up to speed on it because there are so many people who use them. One possibility for the sticking problem you’re having…have you tried brushing a little olive oil or melted butter on the outside of the bread?

    • Hi! I have a cast iron grill too. I always butter my bread first before assembling the sandwich. That seems to work. Sometimes I’ve brushed oil on the pan too but that is a bit trickier as if you use too much the panini won’t be as crispy on the outside but if you don’t use enough it will stick. Just takes a little experimenting. BTW, we brought ours camping one time and our friends thought we were being so fancy to have a panini on a campout (little did they know how easy it really is!)     I recently bought a bag of masa because I’ve heard it’s so easy (and it certainly sounds easy) and so delicious to make your own corn tortillas. I don’t have a tortilla press and I know a rolling pin will do fine, but I thought “Hmmm…. couldn’t you make a ball of dough, place it on the panini, and both press down to make the tortilla AND dry grill it at the same time?

    I’m not sure the plates get close enough to make the tortilla as thin as possible, but it’s worth a try, eh?

    Have you ever made your own tortillas on the press?

      Hi Kristina – Corn tortillas are definitely on my to-try list. I absolutely think they’d work. I’m getting a new grill this week with the flat plates. I’ve had one before and if I recall the flat plates might not meet close enough together when you close the lid, that’s the only part I’m unsure of. The ridged plates should work (there’s got to be a good use for ridged tortillas, right?).
