It’s my 50th sandwich – woo hoo! The people have spoken and Turkey, Cranberry & Havarti Panini it is. Excellent choice, folks! It’s the cranberry sauce that really make this one “taste like Thanksgiving”. The buttery flavor of the Havarti is an excellent complement to the sweet-tartness of the cranberries. I grilled the sandwich on a multigrain baguette, but it would also be delicious on some thick slices of homemade wheat bread.
Did you vote for one of the other two sandwich concepts – the Prosciutto-Wrapped Turkey, Avocado & Swiss Panini or the Pulled Turkey Sliders with Cranberry BBQ Sauce? Well, never fear – I’ll be posting those too! Welcome to the first installment of my 3-part Leftover Thanksgiving Turkey Sandwiches series, designed to give you some easy and tasty ideas for using up your Thanksgiving leftovers, Panini Happy-style. Be sure to come back tomorrow for Part 2 or subscribe to never miss a recipe!

This is a fabulous milestone…and panini!! Congratulations. I can’t wait to see the other two recipes.
So many panini, so little time. This year leftovers will be wonderful with my Breville Ikon. Love your turkey/havarti/cranberry creation.

Happy 50th! I thought it was interesting you had people vote on their favorite recipe. Where there any surprises?

This looks every bit as good as I expected it! 🙂 Now I don’t know what I’m more excited for – Thanksgiving dinner, or leftovers on Friday.
Congrats on #50! This isn’t the sandwich I voted for, but it was only because I can’t resist avocado 🙂 This looks delicious.

Yum! I find the combination of cranberry sauce and Havarti completely appealing. Congrats on your 50th panini post! May there be many more delicious sandwiches to come!
I did smoked turkey sandwiches with cranberry sauce and brie cheese… The brie worked really well with the mix. My favorite leftover sandwich! I was thinking while making one that I needed that panini press I didn’t win to try the panini thing!
I’m finding a new fave, though… Turkey and pomegranate!
Happy 5oth! All the paninis we make from your site have turned out delish! Keep it up!
We were just sitting around wishing Thanksgiving leftovers could be around anytime you snap your fingers! This brings back lovely memories. 🙂
these are on my menu plan this week! ill let u know how they turn out. any suggestions for a different kind of cheese
Great – I hope you like them! A lot of people like Brie with turkey and cranberry sauce too.
we made these for dinner tonight. i went to the deli and tried the havarti cheese and totally loved it. we used chiabatta rolls that were on sale for the bread. they came out awesome. turkey breast was very expensive so we used a turkey london broil. i will be trying more paninis from your blog!
Terrific! So glad you liked the havarti. 🙂
