I was first captivated by the idea of grilled cheese croutons on Pinterest and could not wait to make some of my own. Grilled cheese and tomato soup was my all-time favorite “special” lunch growing up (and probably still is today). It was a back-to-school lunch that I didn’t actually eat at school, as it was a challenge to keep a sandwich warm during the school day and forget about trying to wrangle a hot soup in a Thermos. It was a special treat for the weekends.
Now that my own kids are starting school this week (well, preschool, but they’re excited) I’m looking forward to continuing the grilled cheese and tomato soup weekend tradition. For my Grilled Tomato Soup, I first grilled the tomatoes and onions on the panini press to help bring out their sweetness. I’ve made this soup a number of times now – including for a group of San Diego food bloggers – and everyone has loved it. I made my Grilled Cheese Croutons with Sargento Colby-Jack cheese on sourdough bread with some fresh herb butter on the outside to make them extra-crisp and savory.

I just think these grilled cheese croutons are so cute. Obviously, they’re nothing more than a grilled cheese sandwich that’s been cut into small squares. Even though I grew up loving the yellow American slices, today I’m much more of a “natural cheese” kind of girl so the Sargento slices fit the bill. We all love to eat grilled cheese sandwiches with tomato soup…why not put them in the soup? My little kids thought these squares were pretty fun.
Everyone has their preferences when it comes to tomato soup. For me, it’s all about bright, fresh flavors – but I keep basil and oregano out of the mix to keep it from tasting like marinara. Instead, I go for red bell peppers, fresh parsley and thyme and a tiny bit of red pepper flakes for that lingering heat that makes you want another spoonful. Some people like to strain their soup so it’s perfectly smooth, but I like to keep the purée rustic and a little bit chunky.

Grilled Tomato Soup with Grilled Cheese Croutons
Prep time: 50 minutes | Cook time: 45 minutes | Total time: 1 hour 35 minutes
Yield: 4 servings
INGREDIENTS:
For the soup:
- 2 pounds tomatoes, halved
- 1-2 cups vegetable broth
- 3 tablespoons extra virgin olive oil, divided
- Salt and black pepper
- 1 medium yellow onion
- 1 red bell pepper, chopped
- 3 garlic cloves, minced
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon granulated sugar
- 2 tablespoons chopped fresh parsley
- 1 sprig fresh thyme
For the grilled cheese croutons:
- 2 tablespoons butter, softened
- 1 teaspoon chopped fresh basil*
- 1/2 teaspoon chopped fresh chives*
- 1/2 teaspoon chopped fresh thyme*
- 4 slices sourdough bread
- 6 slices Sargento Colby-Jack cheese, or other semi-firm cheese
* The herbs are optional, but they do add great flavor if you have them on hand.
DIRECTIONS:
Prepare the soup:
- Preheat the panini grill to high heat.
- Scoop out the pulp and seeds from the tomato halves into a small bowl. Place a strainer over a liquid measuring cup; pour the pulp and seeds through the strainer to collect tomato juice. Add enough vegetable broth to the measuring cup to bring the total amount of liquid to 2 cups. Set aside.
- Drizzle the cut sides of the tomato halves with 1 tablespoon of olive oil and season with sea salt and black pepper. Adjust your grill so that it is at a slight tilt (not completely flat), with drip tray in place to collect the juices that will run off. In batches, place the tomatoes, cut side down, on the grill. Close the lid, making light contact with the tomatoes without pressing them. Grill the tomatoes for 8-10 minutes until the outer skins are wrinkly and the tomatoes are soft.
- Slice the onion into 1/2-inch thick rounds (do not separate the rings). Drizzle the onions with 1 tablespoon of olive oil and season with salt and pepper. Place the onions on the grill. Close the lid, making light contact with the tomatoes without pressing them. Grill the onions for 4-6 minutes until they are tender.
- Transfer the onions to a cutting board, let them cool a bit and give them a rough chop.
- Heat the remaining 1 tablespoon of olive oil in a dutch oven or large saucepan over medium heat. Add the red bell pepper and stir for 4 to 5 minutes until it begins to soften. Add in the garlic and red pepper flakes and cook for another minute. Stir in the grilled tomatoes, onions, sugar, parsley, thyme sprig and vegetable stock mixture. Bring the soup to a boil, reduce the heat and simmer uncovered for 40 minutes.
- Purée the soup either with an immersion blender or, in batches, in a blender or food processor. Season with salt and pepper to taste. Serve hot with grilled cheese croutons.
Prepare the grilled cheese croutons:
- Preheat the panini grill to medium-high heat.
- Mix the butter and herbs together in a small bowl. Spread herb butter on each slice of bread. Turn two of the bread slices over; add three slices of cheese to each slice of bread. Close each sandwich with another slice of bread, buttered side up.
- Grill the panini for 3 to 4 minutes until the cheese is melted and bread is toasted. Transfer the panini from the grill to a cutting board. Trim the crusts from the panini and cut up each sandwich into 1-inch square pieces.

My favorite childhood food was corndogs! Every time we went to WinDixie (a grocery store) my mom would get us a corndog from the deli section! It was such a special treat to us. To this day I still love them!

I was lucky enough to come home for lunch when I was in elementary school. My Mom always made homemade bread and I didn’t know how lucky I was for a long time. My favorite lunch was hot bread and butter if she had just made bread that morning, otherwise I had Peanut Butter sandwiches, still a favorite.
OOh this soup looks divine! My favorite lunch as a child was anything with peanut butter. PB sandwiches (NO jelly), stuffed with bananas and/ or pretzels on white. I was a bit of a picky eater.

Oh my goodness – those croutons are fantastic! I adore tomato soup and grilled cheese sandwiches, too and this is such a fun way to combine them.
Now that looks like the ultimate in comfort food! Whe I was growing up my mom would make me pasta & peas, it was so simple yet delicious. Sometimes she still makes it for me and it’s a special treat.
My neighbor made the best PB&J Sandwiches which was one childhood lunch I loved. I also loved our schools Poor Boy Sandiwches. So yummy!

My favorite lunch was a hot pastrami sandwich with a big pickle on the side! There was a local deli in our town and they would build your sandwich for you– fresh pastrami from their meat market, with jack cheese and mustard, all heated up!

Ooh… if that’s the same soup you brought to the Roundtable, it was fantastic! Never thought of grilling the tomatoes before using them in soup before.

I grew up in Hawaii, so my favorite homemade lunch was teriyaki chicken and musubis 🙂
I guess my favorite was cream of tomato soup, because Mom didn’t mind when we sang this stupid song and slurped our soup at the end of each line. “I’m a big ol’ meanie (slurp). I’m a big ol meanie. (slurp) I’m a big ol’ meanie, miney, mo (slurp slurp).” Must have been something we’d seen in a cartoon.
Without a doubt, my favorite childhood lunch was a simple bowl of Campbell’s Condensed Chicken Noodle Soup and saltine crackers. I’d dunk the saltines in the soup and make little, wet sandwiches out of them and the noodles. I used to eat those everyday. Amazingly, my blood pressure is perfectly normal!

My best friend’s Mom used to make the BEST homemade mac and cheese. She would send leftovers in to elementary school for lunch for the two of us to share! I wish I could make it like she did. I can still remember the taste almost 30 years later!! So good!

I grew up on a farm in rural Nebraska (actually, I live on a different farm in rural Nebraska, now, too) and the lunch ladies were my peers’ grandmas so everything was homemade. Our favorite meal, hands-down, was chili and cinnamon rolls.

My favorite lunch was late Sunday afternoon at my best friends house, grilled cheese with bottled peaches and pears. Yum! To this day I can’t eat grilled cheese without thinking of my neighbors. Thanks for the memories!
Oh, my goodness, the grilled cheese sandwich sounds wonderful. I used to really love sharing a bowl of those grody Ramen noodles with my mom for lunch. That was before we knew better, of course. But I loved trying to divide the long noodles evenly between two bowls so we’d each have an equal share and neither get stiffed. She always let me make them, and I felt very grown up boiling the water on the stove.
That is the best idea, I love the mini grilled cheeses floating in the soup! My lunches growing up were pretty boring I have to admit. I liked peanut butter (still love it) and I made peanut butter sandwiches. That’s it, no jelly just peanut butter, and I loved them.

P.B.J. and tomato soup was my favorite lunch when I was a youngster. Hey, it’s still a favorite. Guess one never out grows comfort food.
My mom used to make pink and green sandwiches for us as kids. She’d cut the crust off and add food coloring to a tuna/cream cheese mixture she made. They were so fun that I didn’t mind the wheat bread (almost). That and nachos were probably my favorite lunch foods.
I loved pesto bagels with turkey!
Oh! And tuna burgers! Diced onion + grated cheddar cheese + canned tuna + mayonnaise + chopped celery, put in hamburger buns, wrapped in foil and cooked in the oven = YUMMY! I guess I like tuna a lot. huh, I never realized…

For me, it was Cream Cheese and Jelly sandwiches. My Mom used to trim the crusts and cut them into little triangles, sending me and my best friend off with those and other treats for little picnic lunches. 🙂

I used to be picky about eating sandwiches for lunch because they would get soggy. So my mom used to take rice cakes, put peanut butter on top and added a smiley face with chocolate chips and raisins. Then she would put toothpicks on top and put it in a sandwich back so it wouldn’t stick. Yum 🙂

I still remember skillet potatoes with ground beef. That was sure to be served at least once a week as I’ve found out now it’s easy to make and everyone loves it so it’s a perfect weeknight meal.

I love this idea! Great recipe! I was sort of a weird kid…I didn’t like cheese and I *definitely* didn’t like PB&J. Instead, I brought along that thermos, usually full of some version of chicken noodle soup and little baggies of raw vegetables. And a fruit roll-up, of course!
My favorite lunch was definitely Mcdonald’s Big Mac or Albertsons fried chicken…lol my parents did not like to cook for us so we ate that often. 🙂

For me, I think one of my favorite childhood lunches was when my mom packed me some bun mei (Vietnamese hoagies). I’ve always liked the pate and the sweet mayo on the baguette.
Another favorite would be your good ol’ salami sandwich with tomatoes, lettuce, and a lil bit of mayo. I would stuff with some yellow potato chips before eating it to add an extra crunchy and salty texture 🙂
My favorite childhood lunch was my mom’s fried rice. Hot dogs sliced into little rounds with egg strips with rice. Plain and simple… I like to kick it up a notch these days using Chinese Sausage and chopped green onions as well as yellow onions. 🙂 Made many meals of that in college haha.

My favorite lunch was the one from my childhood friend’s mom – peanut butter and marshmallow fluff sandwiches. I had no idea they had a name until just a few years ago, Fluffernutters.
I used to love PB and pickle sandwiches! My mom would make them for treat lunches, and I just loved them!

I always loved the school lunch feistada! Those were delicious!
Honestly, my favorite lunch was cafeteria spaghetti. In the 3rd grade, I ate it for 21 consecutive days, and I have the weight to prove it!!!
My favorite lunch as a child was the “steak fingers” from the school cafeteria. In quotation marks, because who really knows if they were steak, but they sure did taste yummy! 😛 I looked forward to them anytime I saw them on the calendar. Man, those were the good ol’ days.

I am such a grilled cheese and tomato soup person so thank you for the great recipe. My fondest memories were of my dad and I making grilled cheese and ‘mater soup on Saturday evenings when I was growing up. My taste buds have matured since the processed cheese and canned soup of childhood but it remains my number 1 comfort food.
scrambled eggs in the microwave. my grandma made them and they were always super fluffy and the best tasting egss i ever had!

When I was a lad, I couldn’t resist salami roll-ups with cream cheese. Mom could always get my four brothers and I to sit down and stop acting crazy when she put out a plate of those things! I would also eat anything with fresh tomato and a pickle involved.
I think my favorite food from childhood would have to be homemade vegetable soup with either homemade sour cream cornbread or grilled cheeses. Like someone else said, it was and still is comfort food. When dining on this simple, yet filling, meal, everything seems right with the world. Love the “crouton” idea! This should be a hit with my girls!

I wasa creature of habit as a child- mostly PB & J, yogurt, banana, etc. But I remember my mom making me a Reuben sandwich for the first time and I loved it! Who knew?

My favorite lunch as a kid was a grilled ham and cheese sandwich (I liked panini-style food even then!).
My favorite childhood lunch is definitely a turkey sandwich – gotta love it! Made on a panini press…even better! 🙂
My mom used to buy Pepperidge Farm hoagie rolls and bake them, and fried Polish sausage so we could make sandwiches – they were wonderful! Something about the soft, warm bread with the toasted cornmeal on the crust, and the sausage with the lovely mustard seeds inside. Perfect on a fall day! Wonder if you could do that with a pannini press? Since I don’t have one . . . (hint, hint!) . . .would be fun to find out!
Grilled cheese was always my favorite lunchtime food. Still is…especially on chilly days!! The best is on sourdough bread with cheddar cheese!!
