Big Game Week: Grilled Cod Sliders on Parker House Rolls

Big Game Week on Panini Happy continues with sandwiches to honor the New England Patriots!

You won’t believe how many different ideas I toyed with to represent New England and pair well with New England clam chowder. Panini Happy Facebook fans suggested lobster rolls, fried clams, even a deconstructed New England clam chowder on Boston brown bread (I especially liked that creative one). In the end, I arrived at Grilled Cod Sliders on Parker House Rolls. Inside I’ve dressed them up with a little bacon, lettuce and tomato as well as homemade dill tartar sauce.

Cod has deep ties with New England. I never even thought about it before but did you know that Cape Cod was named for the volume of cod found in Massachusetts Bay? A carving of a codfish, known as the Sacred Cod, hangs in the House of Representatives chamber of the Massachusetts State House in Boston, symbolizing the importance of the fishing industry in the state.

Any fluffy dinner roll would work great for these sliders, but if you want to keep the New England theme going, buttery Parker House rolls like the ones I baked are the way to go. They originated at the Parker House Hotel (also the birthplace of the Boston Cream Pie) in Boston in the late 1800′s. I followed the recipe from Joy the Baker, but there are also some great ones from King Arthur Flour and The Pioneer Woman.

Many thanks to Kelly from Evil Shenanigans and Lisa from Lisa is Cooking for the tartar sauce ideas they shared with me on Twitter. Kelly’s sauce base combined with the flavors of pickle juice and dill from the recipe Lisa shared makes a pretty amazing condiment to go with fish!

Grilled Crab, Mango & Avocado

It’s been a hot time for sandwiches lately! Two of my blogging friends have released sandwich cookbooks in the past month. By their titles, 400 Best Sandwich Recipes and The Encyclopedia of Sandwiches, you can tell right away that each covers quite a bit of sandwich territory. Today I’ll share with you the Grilled Crab, Mango & Avocado recipe from 400 Best Sandwich Recipes, by Alison Lewis of Ingredients, Inc. and later this week I’ve got another recipe from The Encyclopedia of Sandwiches, by Susan Russo of Food Blogga.

In 400 Best Sandwich Recipes, Alison Lewis takes on the gargantuan task of creating a comprehensive collection of sandwich recipes – everything from the classics to burgers to wraps and condiments. The Grilled Cheese section alone contains 91 recipes – and I thought I was exhausted of grilled cheese!

Without question, coming up with this many sandwich recipes requires a good amount of creativity. Alison’s creativity proves to be boundless as she delivers innovative twists on familiar favorites such as BLT Pimiento Cheese Sliders, Tuna Caesar Wraps Prosciutto and Melon Grilled Cheese. She also has an appetizer section with a slew of mini sandwiches and crostini.

Out of the 400 recipes in this cookbook, the one that I knew right away I wanted to make first was the Grilled Crab, Mango & Avocado. The reason? A chance for sandwich redemption.

Caesar Shrimp & Arugula Panini (+ Panini Express Cookbook Giveaway!)

I was doing a little holiday shopping in Williams-Sonoma last week and couldn’t help but take a looksie over at their panini-related offerings (got to keep up with what’s out there!). They were promoting a cookbook called Panini Express: 70 Delicious Recipes Hot Off the Press. Bacon Tuna Melt Panini

Do you say “tunafish”? Or just “tuna”?

Sandwiches made with a salad of canned tuna, mayonnaise and celery were “tunafish” to me growing up because that’s what my parents, both New Yorkers, called them. But I’ve rarely, if ever, heard the word in California. It’s always “tuna salad” or “tuna sandwich”, but never “tunafish.” I’m thinking it might be a regional term. Like “pocketbook”, “dungarees” and “AH-ranges” – other notables from my early vocabulary that used to perplex my childhood friends on the West Coast.

Barbecued Salmon Panini

Today’s panini recipe is inspired by my new adopted “dad” – Curt from Bucky’s Barbecue and Bread. Curt and I are participating in the Adopt-a-Blogger event and before I tell you more about him and the event, let me describe this Barbecued Salmon sandwich I made to welcome him to Panini Happy. As his blog name implies, Curt is a barbecue guy and so on this final day of summer I kept my panini maker in its box for a change and fired up my trusty Weber gas grill. Wild coho salmon is basted with a layer of barbecue sauce and crusted in panko bread crumbs before being grilled to perfection. It’s then transferred to some lightly-charred rustic bread, with a generous amount of barbecue remoulade, fresh tomatoes and red onions. I want you to know that this sandwich now ranks among my all-time favorites!

Crispy Fish Panini Recipe

It’s back! It’s been a little while since I’ve opened the On Your Grill vault – I’ve got a good one for you today. As you’ll recall, the On Your Grill series is an opportunity for Panini Happy readers to submit your ideas for panini and have them featured here on the blog (click here to submit one!). There have been some great combinations in the past: Grilled Raclette Cheese & Honey, Roast Beef with Blue Cheese & Apple, Tomato, Feta & Oregano. It’s high time I tried another one!

Robin Sue of the Big Red Kitchen blog had the following suggestion:

Ok, I would like one with the fried fish patty from my site. Hmm. Fish Patty, with a good robust tartar sauce, you are good at picking the cheese and bread with some type of salad greens or coleslaw or pickles or something….

A Panini Happy First – incorporating a recipe from another blog! Well, Robin Sue, I’m more than happy to do it, especially since I’d already starred your yummy-looking Favorite Fish Patties in my Google Reader and was planning to make them soon. And then a few days later I saw a great recipe for tartar sauce on Closet Cooking (Kevin has been unveiling the secrets behind his delicious fish & chips over the past week!). So I decided to go ahead and make that too! And, of course, I had to put my own Panini Happy “stamp” on things with some more of that sharp Old Quebec Vintage Cheddar that I had on last week’s Burger Mini-Panini Sliders. Put it all together on a nice, soft English muffin and you’ve got a sandwich that’s a keeper.

Pancetta-Wrapped Shrimp & Goat Cheese Flatbread Panini Recipe

You know the Kohler plumbing fixtures commercial – “Design a house around this…” and then the couple presents their architect with a rather striking faucet for inspiration. That ad came to mind as I was gearing up to create a panini recipe involving shrimp. Usually, I have a specific sandwich concept in mind at the outset but this time I decided to work “from the inside out” and let my palette be my guide. Not a bad approach, it turns out! I ended up grilling jumbo prawns inside some pancetta, balancing the saltiness with some sweet caramelized Vidalia onions and creamy goat cheese, tossing in some chopped parsley for fresh color and flavor and wrapping it all up in a crispy pita. Delicious!

Smoked Salmon Bagel Panini Recipe

If you enjoy a good bagel right out of the toaster, you’re going to love a freshly grilled bagel panini sandwich! This new twist on the traditional bagel and lox is a bright and flavorful way to dress up your breakfast or lunch plate. With the tops and bottoms removed, the bagels crisp up nicely on the outside yet remain nice and soft on the inside. Smoked salmon and whipped cream cheese are complemented by fresh tomatoes, red onion and a light and zesty dill-watercress salad. Want to read how this recipe was created? Caribbean Fish Panini Recipe

With panko-breaded tilapia, vibrant mango salsa, zesty lime dressing, spicy pepper jack cheese, the flavors in this sandwich will transport you to the islands! This recipe takes advantage of the versatility of the panini press, grilling both the fish and sandwich. Want to see how this recipe was created? Check out “A Fish Meandering” Parts I and II.

4 servings

INGREDIENTS:

1 cup mango, diced into 1/2″ chunks

1/4 red onion, chopped finely

1/4 cup cilantro, chopped

2 tablespoons light sour cream

2 tablespoons light mayonnaise

1 teaspoon freshly squeezed lime juice

1 cup panko breadcrumbs

1/4 teaspoon sea salt

1 egg

4 tilapia filets (approx. 1 lb total)

4 slices pepper jack cheese

8 slices sourdough bread

2 tablespoons olive oil

DIRECTIONS:

To make the mango salsa: Combine mango, red onion and cilantro in a medium bowl; set aside.

To make the lime dressing: Combine sour cream, mayonnaise and lime juice in a small bowl; set aside.

Preheat panini grill to 350 degrees.

To prepare the tilapia: In a shallow bowl, combine panko crumbs and salt. In another shallow bowl, beat egg. Dip each tilapia filet first in the egg and then in the crumb mixture, coating well with crumbs. Grill tilapia on the panini grill for 5-6 minutes or until fish is cooked through.

To build the panini: Spread a few teaspoons of lime dressing on a piece of sourdough. Spoon about 1/4 cup of mango salsa on top of the lime dressing. Place a tilapia filet on top of the mango salsa. Lay a slice of the pepper jack cheese on top of the tilapia. Top with another slice of sourdough. Brush olive oil on the top of the sandwich.

Grill for about 6 minutes or until the bread is crispy and golden and the cheese is melted. Serve hot.
