<p>It&#8217;s that time of year again &#8211; <strong>Big Game Panini Week</strong>! Each year I create sandwiches in honor of each of the teams playing in the Super Bowl. A reader, Joanne, suggested on the <strong><a title="Join Panini Happy fans on Facebook" href="http://www.facebook.com/paninihappy1" target="_blank">Panini Happy Facebook community</a></strong> that since this year&#8217;s matchup between the New York Giants and the New England Patriots is a <strong><a href="http://www.huffingtonpost.com/2012/01/25/super-bowl-chowder-showdown_n_1231726.html" target="_blank">&#8220;chowder showdown&#8221;</a></strong> the sandwiches should pair well with Manhattan and New England clam chowder, respectively. It sounded pretty logical to me!</p>
<p>Tomato-based Manhattan clam chowder can definitely hold its own alongside the bold flavors in these <strong>Pastrami, Aged New York Cheddar and Peperoncini Panini</strong>. You can&#8217;t help but think &#8220;deli&#8221; when you think about <strong><a title="Panini Happy’s Great American Sandwich Guide ~ New York" href="http://paninihappy.com/panini-happys-great-american-sandwich-guide-new-york/">New York City sandwiches</a></strong>. One of the city&#8217;s most famous is <strong><a title="Katz's Deli" href="http://katzsdelicatessen.com/" target="_blank">Katz&#8217;s Deli</a></strong>, where they&#8217;ve been serving their prized, enormous hot pastrami sandwich for decades. Here, I&#8217;ve matched pastrami with some sharp aged New York cheddar, tangy peperoncini (aka sweet Italian peppers) and a bold homemade horseradish sauce on pumpernickel. For fun, I decided to cut the bread into football shapes and decorate them with more of the horseradish sauce. I&#8217;m strongly tempted to invite people over to watch the game on Sunday just so I can make these again.</p>
<p>New England fans: get ready to see what I grilled for your team later this week!</p>

</p><p>If I were to ever lose my iPhone whoever found it would be privy to my ongoing list of sandwich ideas in my Notes app. I jotted down the concept for today&#8217;s <strong>Green Chile Steak Melt Panini</strong>while on vacation in Santa Barbara a few months ago.</p>

<p>We had made our way to the <strong><a href="http://hollisterbrewco.com/">Hollister Brewing Company</a></strong> in Goleta at the end of a long day of kite flying and butterfly chasing. I ordered a fantastic sandwich &#8211; the Spicy Steak Melt &#8211; with thinly sliced steak, chiles, onions, pepper jack and chipotle crema on a baguette. It was like an incredible southwestern cheese steak. It went straight into the Notes file to remind me to recreate my own version at home.</p>

</p><p>This past weekend I decided to recreate the short rib panini I&#8217;d been hearing so much about around town. Port wine braised beef with aged cheddar and onion marmalade &#8211; it sounded unbelievable. They serve them at <strong><a title="Nine-Ten Restaurant" href="http://www.nine-ten.com" target="_blank">Nine-Ten</a></strong>, an upscale restaurant at the <a title="The Grande Colonial Hotel in La Jolla" href="http://www.thegrandecolonial.com/" target="_blank"><strong>Grande Colonial Hotel</strong></a> in nearby La Jolla, and have been described as <a title="See the Yelp reviews of Nine-Ten's panini" href="http://www.yelp.com/biz/nine-ten-la-jolla?q=panini" target="_blank"><strong>&#8220;a delectable infusion of flavor&#8221;</strong></a> and <a title="See reilie's Short Rib Panini photo on Flickr" href="http://www.flickr.com/photos/32277886@N06/3707021179/" target="_blank"><strong>&#8220;the best panini I&#8217;ve ever eaten&#8221;</strong></a>. That was all the convincing I needed.</p>

</p><p>[tweetmeme] Suffice it to say Southwestern Chili Panini aren&#8217;t likely to win any <a title="The Grilled Cheese Pageant on Panini Happy" href="http://paninihappy.com/the-grilled-cheese-pageant/" target="_blank"><strong>sandwich beauty pageants</strong></a>. But while they might not be much of a feast for the <em>eyes</em>, let me assure you that your <em>mouth </em>will be very happy you decided to make them.</p>
<p>With the colder temperatures and football championships upon us, it&#8217;s chili-making season. I just tried a <a title="See the Chili recipe on my other blog, Cooking On the Side" href="http://cookingontheside.com/chili/" target="_blank"><strong>new-to-me chili recipe</strong></a> (posted on my other blog, <a title="Cooking On the Side" href="http://www.cookingontheside.com" target="_blank"><strong>Cooking On the Side</strong></a>) earlier this week and it was so flavorful and satisfying I knew the leftovers would make a terrific sandwich filling. I added in other favorite chili toppings &#8211; shredded cheddar cheese, sour cream and red onions &#8211; and piled it all onto a hollowed-out sourdough roll. I could have stopped here and enjoyed a great sandwich, but taking the final step of grilling it allowed the bread to crisp on the outside and remain soft and piping hot on the inside. Sloppy, delicious heaven.</p>

<p>One year ago this week I got off the fence and put up <a title="Read my first-ever blog post!" href="http://paninihappy.com/a-moratorium-on-the-appliance-wasteland/" target="_self"><strong>my first-ever blog post</strong></a>.  I hadn&#8217;t even heard of the term &#8220;food blogger&#8221; and yet I had just become one. And I&#8217;m so glad I did!</p>
<p>At a time in my life when I might have otherwise become a bit insular and excessively baby-obsessed, having stepped out of the working world to take care of my newborn daughter, Panini Happy very quickly became an important creative outlet for me. As I&#8217;ve been expressing myself through food blogging I&#8217;ve made so many great new friends who share a common interest in panini and food in general. Through fun exchanges on <strong><a title="Twitter" href="http://twitter.com/paninikathy" target="_blank">Twitter</a>,</strong> e-mails, <a title="I'm on Facebook!" href="http://www.facebook.com/profile.php?id=1047505171" target="_blank"><strong>Facebook </strong></a>messages and even a smattering of in-person meetups,  it&#8217;s been a blast to get to know so many foodie folks.  What I initially thought would be this quiet little project involving just me, my panini press, the computer and &#8220;cyberspace&#8221; has become a far more interactive, social, rewarding undertaking than I ever could have imagined.  Thanks so much to all of you for reading my blog, commenting on my posts, trying out my panini recipes (who knew I&#8217;d ever grill this much?) and embracing me into the online food community!</p>
<p>To celebrate her first birthday (I decided my blog is a &#8220;she&#8221;), I grilled Panini Happy a big, messy roast beef and sharp white cheddar sandwich with sweet caramelized red onions and horseradish mayo.  On a homemade baguette!</p>

<p><img class="aligncenter size-full wp-image-1334" title="Roast Beef &amp; Cheddar Panini" src="http://paninihappy.com/wp-content/uploads/2009/01/roastbeefcheddar.jpg" alt="Roast Beef &amp; Cheddar Panini" width="490" height="327" /></p>
<p><strong>Roast Beef and Cheddar Panini</strong></p>
<p><em>Serves 4</em></p>
<p>INGREDIENTS:</p>
<p>1 tablespoon olive oil<br />
1 red onion, halved and thinly sliced<br />
1/2 teaspoon balsamic vinegar<br />
Salt and pepper<br />
1/2 cup mayonnaise (I use light)<br />
2 tablespoons prepared horseradish<br />
4 small baguettes or 1 large baguette cut into 4 pieces, halved lengthwise<br />
1/2 lb. roast beef, thinly sliced<br />
4 oz. sharp cheddar cheese, sliced</p>
<p>DIRECTIONS:</p>
<p>Heat olive oil in a large sauté pan over medium heat. Add onions and sauté 20-25 minutes until caramelized. Remove from heat. Stir in balsamic vinegar and season with salt and pepper.  Set aside.</p>
<p>Preheat panini grill to medium-high heat (375 degrees).</p>
<p>Combine mayonnaise and horseradish in a small bowl.  Spread a thin layer of horseradish mayo inside the bottom half of each baguette. Add onions, roast beef and cheese and close the sandwich with the top baguette half.</p>
<p>Grill 6-7 minutes until cheese is melted.  Serve immediately and enjoy!</p>

<p>Alooooooha!!  I just got back from a week in beautiful Maui &#8211; our first real <em>family </em>vacation since our daughter was born almost a year ago.  Gorgeous weather, friendly people and an all-around wonderful time.  And I brought you back a few souvenirs: details on our three favorite places to eat on Maui and an island-inspired panini recipe!</p>
<p><img class="alignright size-medium wp-image-746" style="MARGIN: 0px 0px 10px 10px" title="Wailea" src="http://paninihappy.com/wp-content/uploads/2008/10/wailea-300x225.jpg" alt="" width="300" height="225" align="right" />I chose to make Maui-Style Teriyaki Beef Panini based on the positively mouthwatering soy- and ginger-marinated thin strips of steak we enjoyed at <a title="Da Kitchen" href="http://www.da-kitchen.com/" target="_blank"><strong>Da Kitchen</strong></a> in Kihei.  It was pretty easy to re-create at home, especially since I cheated a little with store-bought marinade.  I also wanted to include some sweet Maui onions, which I enjoyed all over the island &#8211; crispy-fried for a little texture as well as great flavor.  And finally, what kind of Hawaiian sandwich would it be without a little pineapple?  All piled on a nice, crusty ciabatta (hey, Hawaii is all about combining cultures!) this sandwich summarized my delicious memories of the islands.</p>
