Big Game Week: Pastrami and Aged Cheddar Football Panini

It’s that time of year again – Big Game Panini Week! Each year I create sandwiches in honor of each of the teams playing in the Super Bowl. A reader, Joanne, suggested on the Panini Happy Facebook community that since this year’s matchup between the New York Giants and the New England Patriots is a “chowder showdown” the sandwiches should pair well with Manhattan and New England clam chowder, respectively. It sounded pretty logical to me!

Tomato-based Manhattan clam chowder can definitely hold its own alongside the bold flavors in these Pastrami, Aged New York Cheddar and Peperoncini Panini. You can’t help but think “deli” when you think about New York City sandwiches. One of the city’s most famous is Katz’s Deli, where they’ve been serving their prized, enormous hot pastrami sandwich for decades. Here, I’ve matched pastrami with some sharp aged New York cheddar, tangy peperoncini (aka sweet Italian peppers) and a bold homemade horseradish sauce on pumpernickel. For fun, I decided to cut the bread into football shapes and decorate them with more of the horseradish sauce. I’m strongly tempted to invite people over to watch the game on Sunday just so I can make these again.

Green Chile Steak Melt Panini

If I were to ever lose my iPhone whoever found it would be privy to my ongoing list of sandwich ideas in my Notes app. I jotted down the concept for today’s Green Chile Steak Melt Paniniwhile on vacation in Santa Barbara a few months ago.

We had made our way to the Hollister Brewing Company in Goleta at the end of a long day of kite flying and butterfly chasing. I ordered a fantastic sandwich – the Spicy Steak Melt – with thinly sliced steak, chiles, onions, pepper jack and chipotle crema on a baguette. It was like an incredible southwestern cheese steak. It went straight into the Notes file to remind me to recreate my own version at home.

Meat Loaf Patty Melt Panini

Let’s see…so far we’ve discussed the secrets to getting dinner on the table and flavor-boosting ingredients that make meals taste great with less work. Continuing with this month’s Get Dinner on the Table series, I think it’s a good time to talk about leftovers.

Have you noticed that leftovers tend to make great panini? Often it’s just a matter of adding some good bread, cheese or flavorful condiments to last night’s dinner and you’ve got a pretty fabulous sandwich. This week, I decided to parlay the first meat loaf I’ve ever made into Meat Loaf Patty Melt Panini.

Braised Short Rib Panini

This past weekend I decided to recreate the short rib panini I’d been hearing so much about around town. Port wine braised beef with aged cheddar and onion marmalade – it sounded unbelievable. They serve them at Nine-Ten, an upscale restaurant at the Grande Colonial Hotel in nearby La Jolla, and have been described as “a delectable infusion of flavor” and “the best panini I’ve ever eaten”. That was all the convincing I needed.

Southwestern Chili Panini

[tweetmeme] Suffice it to say Southwestern Chili Panini aren’t likely to win any sandwich beauty pageants. But while they might not be much of a feast for the eyes, let me assure you that your mouth will be very happy you decided to make them.

With the colder temperatures and football championships upon us, it’s chili-making season. I just tried a new-to-me chili recipe (posted on my other blog, Cooking On the Side) earlier this week and it was so flavorful and satisfying I knew the leftovers would make a terrific sandwich filling. I added in other favorite chili toppings – shredded cheddar cheese, sour cream and red onions – and piled it all onto a hollowed-out sourdough roll. I could have stopped here and enjoyed a great sandwich, but taking the final step of grilling it allowed the bread to crisp on the outside and remain soft and piping hot on the inside. Sloppy, delicious heaven.

Red Wine-Braised Flank Steak with Roasted Peppers, Onions & Gruyere Panini

Back in April, as I whined about noted the 45 minutes it took me to slowly caramelize the onions for Tom Colicchio’s Gruyère with Caramelized Onions panini, I received my first clue that the man believes delicious food sometimes takes a good amount of time and patience to prepare. So it did not come as a real shock when his Red Wine-Braised Flank Steak with Roasted Peppers, Onions & Gruyere (…exhale…) sandwich recipe from his ‘wichcraft cookbook took nearly 4 hours.

Pittsburgh-Style Cheese Steak Panini

That’s quite a beast, isn’t it?

If you’ve never been to Pittsburgh you’re probably thinking I’ve finally gone Panini Delirious. But if you’re from the ‘burgh, this behemoth featuring a sirloin beef patty, Provolone cheese, french fries, cole slaw and tomatoes might remind you of a popular local favorite – the Pitts-burgher Cheese Steak at Primanti Bros. With the the Super Bowl coming up this Sunday I’m making panini in honor of each of the participating teams. Today’s is for the Pittsburgh Steelers (Cardinals fans can relax – I’ll be talking about y’all tomorrow!).

Panini Happy is Turning 1!

One year ago this week I got off the fence and put up my first-ever blog post. I hadn’t even heard of the term “food blogger” and yet I had just become one. And I’m so glad I did!

At a time in my life when I might have otherwise become a bit insular and excessively baby-obsessed, having stepped out of the working world to take care of my newborn daughter, Panini Happy very quickly became an important creative outlet for me. As I’ve been expressing myself through food blogging I’ve made so many great new friends who share a common interest in panini and food in general. Through fun exchanges on Twitter, e-mails, Facebook messages and even a smattering of in-person meetups, it’s been a blast to get to know so many foodie folks. What I initially thought would be this quiet little project involving just me, my panini press, the computer and “cyberspace” has become a far more interactive, social, rewarding undertaking than I ever could have imagined. Thanks so much to all of you for reading my blog, commenting on my posts, trying out my panini recipes (who knew I’d ever grill this much?) and embracing me into the online food community!

To celebrate her first birthday (I decided my blog is a “she”), I grilled Panini Happy a big, messy roast beef and sharp white cheddar sandwich with sweet caramelized red onions and horseradish mayo. On a homemade baguette!

My little blog baby is all growns up.

Roast Beef and Cheddar Panini

Serves 4

INGREDIENTS:

1 tablespoon olive oil
1 red onion, halved and thinly sliced
1/2 teaspoon balsamic vinegar
Salt and pepper
1/2 cup mayonnaise (I use light)
2 tablespoons prepared horseradish
4 small baguettes or 1 large baguette cut into 4 pieces, halved lengthwise
1/2 lb. roast beef, thinly sliced
4 oz. sharp cheddar cheese, sliced

DIRECTIONS:

Heat olive oil in a large sauté pan over medium heat. Add onions and sauté 20-25 minutes until caramelized. Remove from heat. Stir in balsamic vinegar and season with salt and pepper. Set aside.

Preheat panini grill to medium-high heat (375 degrees).

Combine mayonnaise and horseradish in a small bowl. Spread a thin layer of horseradish mayo inside the bottom half of each baguette. Add onions, roast beef and cheese and close the sandwich with the top baguette half.

Grill 6-7 minutes until cheese is melted. Serve immediately and enjoy!

Maui-Style Teriyaki Beef Panini

Alooooooha!! I just got back from a week in beautiful Maui – our first real family vacation since our daughter was born almost a year ago. Gorgeous weather, friendly people and an all-around wonderful time. And I brought you back a few souvenirs: details on our three favorite places to eat on Maui and an island-inspired panini recipe!

I chose to make Maui-Style Teriyaki Beef Panini based on the positively mouthwatering soy- and ginger-marinated thin strips of steak we enjoyed at Da Kitchen in Kihei. It was pretty easy to re-create at home, especially since I cheated a little with store-bought marinade. I also wanted to include some sweet Maui onions, which I enjoyed all over the island – crispy-fried for a little texture as well as great flavor. And finally, what kind of Hawaiian sandwich would it be without a little pineapple? All piled on a nice, crusty ciabatta (hey, Hawaii is all about combining cultures!) this sandwich summarized my delicious memories of the islands.
