Peanut Butter Pie for Mikey and Jennie

I was seated at a round table in one of those big hotel ballrooms at a blogging conference when a smiling brunette sat down next to me and announced, “Kathy? I’m Jennie Perillo!” The second I heard that terrific Brooklyn accent I instantly recognized the girl I’d come to know over the years through our blogs and Twitter. Finally meeting in person was like catching up with an old friend. Her posts on In Jennie’s Kitchen are heartfelt. She’s not afraid to open up and speak her mind and her love of family and food always shines through.

Pie isn’t something I normally post on Panini Happy, but I’ve got a good reason to do so today. I’m proudly joining more than three hundred other friends and fans of Jennie’s in sharing a Peanut Butter Pie to celebrate the life of her husband Mikey, which was suddenly and unexpectedly cut short this past Sunday. It was a pie Mikey loved. Jennie asked those of us who have been reaching out to support her and their two little girls during this difficult time to make a peanut butter pie and share it with someone we love. I have been enjoying this unbelievable pie with my husband and two little kids, whom I’ve been hugging extra tight.

We love you, Jennie – here’s a great big hug coming to you from all the way out in California.

Happy New Year! The Road Ahead in 2011…

Stepping off the fast lane and enjoying the trails a little more in 2011.

Happy New Year! I hope it’s off to a great start for you. I’m thrilled that more than 1,200 of you have downloaded my little holiday gift, the 10 Best Panini (2010 Edition) Mini Cookbook. It’ll be available till the end of January so you have a few more weeks to grab a copy if you haven’t already done so.

My family and I enjoyed a blissful eight days in Scottsdale, Arizona over the holidays. Maybe it’s the dry high desert air or the relaxed atmosphere but I can’t help but take things a bit slower when I’m out there. It was exactly what I needed after a super-hectic few months – time to just slow down, toss a bouncy ball with my little kids, challenge my parents to a highly addictive iPhone word game, see a mindless movie with my husband and sister, watch my 9-month old nephew give himself couscous facials, spend some quiet time alone with a good book.

This photo booth pic from the closing party says it all – the two-day BlogHer Food ’10 conference in San Francisco this past weekend was an absolute blast. I had anxiously awaited this trip for months, a rare opportunity for me to step out of my day-to-day routine and immerse myself with the food blogging world and its inhabitants. This was my third BlogHer conference and every time I leave inspired, exhausted and with a renewed understanding of why I love cooking and blogging.

I’m Featured in Pillsbury Magazine!

When I first moved to my own apartment after college, my mom supplied me with a bunch of Pillsbury magazines that she’d saved over the years. I don’t think either of us would have predicted that one day I’d be in it!

The next time you’re in line at the grocery checkout, take a look at Pillsbury’s new Sandwiches & Salads edition. The first section, dedicated to grilled sandwiches, includes two of my most popular recipes: Buffalo Chicken Panini and Classic Reuben Panini.

There’s also a great feature article on pg. 2, called “How to Make Perfect Panini”, which was adapted in part from my 8 Tips for Making Great Panini post from my Panini 101 series.

Celebrating 2 Years of Panini Happy-ness!

Two years and almost 80 panini ago I started this blog as a way to motivate myself to put my newly-received panini maker to good use. Beyond making panini I’ve also made a great number of friends among Panini Happy readers and other food bloggers. It always makes my day when I receive e-mails or tweets from you all that you’ve enjoyed my recipes or that the blog has inspired you to create new panini ideas of your own. Heading into my third year, I look forward to bringing you even more new recipes, (hopefully) an updated blog design and other features that will make Panini Happy an even more fun and engaging place to visit.

I had contemplated commemorating Panini Happy’s 2nd birthday with a giveaway, but in light of recent events I’ve decided to instead make a donation to the Red Cross to help in the Haiti earthquake relief efforts and I hope you’ll join me. My family has a personal connection to Haiti – my parents helped to found a nonprofit called the Center of Hope (Haiti), Inc a few years ago, which has been building an orphanage for 100 children and a school for 200 in Hinche, Haiti. To date, they have not had any word from people in Hinche as to their well being or the status of the buildings. UPDATE from Center of Hope (Haiti) – 1/17/10: We received great news this morning from our construction manager. He is alive and well in Port Au Prince and is in the process of helping others. Our people on the ground in Hinche are all well. Our orphanage complex is intact with no known damage. The road between hinche and Port Au Prince is open, but is heavily burdened with people going in both directions. Thanks to everyone for their prayers and expressions of support.

If you pray, please pray for the millions who have been impacted by this devastating earthquake and for the relief workers. And if you have the means to make a financial donation to the Red Cross please do so on their website (click on the big red “Donate Now” button) or by texting “HAITI” to 90999 and $10 will be sent to the Red Cross, charged to your cell phone bill.

Li’l ol’ Panini Happy made it onto TLC.com!

As you may know, Jaden Hair from Steamy Kitchen recently launched a new blog on the TLC website – Steamy Kitchen on TLC. Between this and the launch of her fabulous new cookbook last month, The Steamy Kitchen Cookbook, she’s quite the busy lady these days! Jaden’s new blog provides the voice of simple, delicious cooking on TLC. So when she approached me about creating a panini recipe for her readers I, of course, was more than happy to oblige.
