Hi Kristina - Corn tortillas are definitely on my to-try list. I absolutely think they'd work. I'm getting a new grill this week with the flat plates. I've had one before and if I recall the flat plates might not meet close enough together when you close the lid, that's the only part I'm unsure of. The ridged plates should work (there's got to be a good use for ridged tortillas, right?).

You're the perfect person to ask this question! I have a panini grill which has reversible plates (ridges and flat) so it can be used as a griddle, basically.

I recently bought a bag of masa because I've heard it's so easy (and it certainly sounds easy) and so delicious to make your own corn tortillas. I don't have a tortilla press and I know a rolling pin will do fine, but I thought "Hmmm.... couldn't you make a ball of dough, place it on the panini, and both press down to make the tortilla AND dry grill it at the same time?

I'm not sure the plates get close enough to make the tortilla as thin as possible, but it's worth a try, eh?

Have you ever made your own tortillas on the press?

Great looking breakfast burrito! I like to grill my burritos as well. Just try to get any cheese near the edge so that it gets a chance to melt when you grill it up.

Hi Kathy -- first time visiting your blog. You have some fantastic recipes on here! I am SO craving panini right now. Gosh, it has been too long since I've had one. This breakfast burrito idea sounds great, but I've been browsing your site and there are so many to choose from!

Kathy so good to see that you are still putting out creative and delicious panini for us all to enjoy! Great combinations every time. This breakfast one looks perfectly hearty for my hungry family. Thanks!
